Vinification Details: Bunches are destemmed and placed in open top fermenters. The grapes are turned 4 times a day in order to aerate the wine to ensure soft and fruity tannins. Malo-lactic fermentation follows. The wine is then kept on the fine lees until ready to bottle.
History: Boutinot South Africa have long standing relationships with growers, which allows us to source the best parcels of fruit. Our head South African winemaker Marinda Kruger Van Eck works closely with the vineyard s and selects the very best sites.
Regional Information: Grapes are sourced from long established vineyards on the Wellington/Swartland border, an area of low rainfall and mainly decomposed granite soils. The vines are low-trellised and the grapes were picked mid-March.
